I've always had a certain affinity for Latin American culture, perhaps because I got exposed to it (and the Spanish language) at an early age. While the countries all share a lot, each has its own flavor, making each a worthwhile experience.

Brazil
I don't speak Portuguese, so the Spanish angle is diminished, but I've still gotta get to Brazil, if only to see the craziness of Rio during Carnival. I'd also love to see some of the Amazon delta, even though that's not always high on other people's lists.
